Crispy Rice Sushi Bites

Step 1
In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Pour over the cooked sushi rice and mix well. Let it cool.
Step 2
Shape the rice into small rectangles or disks. Use a little water on your hands to prevent sticking.
Step 3
Heat vegetable oil in a non-stick pan over medium-high heat. Fry the rice shapes until crispy and golden on both sides, about 2-3 minutes per side. Remove and drain on paper towels.
Step 4
In a bowl, mix soy sauce, mayonnaise, and sriracha sauce. Use this to marinate the diced tuna or salmon.
Step 5
Top each crispy rice piece with a slice of avocado and a spoonful of the marinated tuna or salmon.
Step 6
Garnish with sesame seeds, nori strips, and chopped green onions.
